Colour and their nutrients

Carrots can be found in different colours with different nutrients for various health benefits.

  • Orange

The common type of carrot that is often seen on our dining table. It is packed with beta and alpha carotene that will be transformed into vitamin A in our body for eye health. 

  • Purple

Contributed by high amount of anthocyanin that is known for its antioxidant properties in preventing heart disease and degenerative diseases. 

  • Red

Can carrot peels be eaten?

Carrot peels contain some nutrients such as vitamin C, vitamin B3 (niacin), and other phytonutrients. It is perfectly edible as long as it has been cleaned thoroughly to remove dirt on its surface by washing it under running water for about 30 minutes to fully remove dirt, any remaining pesticide residue and even bacteria. Hence, opt for organic ones for minimum pesticide exposure and get the most nutrients out of it!

Eaten raw or cooked?

Preparing carrots by steaming or with minimum heating would make beta-carotene to be more readily available to be absorbed by our body due to cooked carrots would have their cell walls soften from heat. No worries about losing the beta-carotene in the carrot as it is a fat-soluble vitamin. 

You may still consume carrots raw by incorporating into your salad, smoothie or juice as it still remains its fibre, potassium and other beneficial nutrients for optimal health. Thus, variety is the key to a healthy diet.
