Thus, it is suggested to discard any potatoes that have sprouted and turned green. It is still acceptable to purchase and to be eaten if the eyes of potatoes are not sprouting. 

How to preserve the nutrients during cooking process

You may bake, boil or steam them with their skins intact as some of the nutrients close to the skin are lost when potatoes are peeled before cooking. If the peeling process is necessary, use a peeler and peel as thin as possible. Furthermore, do not soak peeled potatoes in cold water to keep them crispy, since some water soluble nutrients such as B vitamins will leach out into the water even before the cooking process. 

How to store potatoes for a longer period?

Keep the potatoes in a dark environment and temperature as cool as 7 to 10 degree Celsius. Avoid exposing potatoes to sunlight which will speed up the formation of solanine that would lead to potatoes turning green, which indicates poisonous and not fit for consumption anymore. Besides, keeping potatoes away from other fruits and vegetables as potatoes would produce ethylene gas that would speed up the ripening process of other fruits and vegetables.
