Highlights: Low in calories but rich in nutrients and fibre, organic Portobello mushrooms contain indoles, polyphenols and carotenoids which have antioxidant, anti-inflammatory, and anticancer effects. They also contain ergosterol which can be transformed into vitamin D2 (ergocalciferol) with UV light. This is a a vegetarian form of vitamin D found only found in plants and is used to fortify foods. The B vitamin group B2 riboflavin, B3 niacin, B5 pantothenic acid and B9 folate are also present in useful quantities. Considered neither plant nor animal, these fungi nonetheless add considerable benefits to the diet.
These fresh mushrooms add rich savoury flavours to any dish due to the presence of the amino acid glutamate, also found in seaweed, sun-dried tomatoes and parmesan cheese. Because of their unique texture and flavour they make an excellent meat substitute for vegetarians and their earthy, umami-rich taste adds depth to savoury dishes. Try marinating these large portobello mushrooms for 10 mins in your favourite sauce, then grill or fry for 3-6 minutes to add caramelisation.
