Thought to have originated in South and East Asia where it has been cultivated since prehistory, aubergine is an interesting addition to any diet. In fact China and India together account for over 80% of the world’s production now. Like tomatoes and potatoes from the New World it belongs to the Solinaceae or nightshade family.
In addition being an excellent source of fibre, eggplant also contains important phytonutrients, many of which have antioxidant activity. Phytonutrients contained in eggplant include phenolic compounds, such caffeic and chlorogenic acid, and flavonoids, such as nasunin which are thought to have anti-cancer properties.
Ideally prepare the aubergine by sprinkling with salt to release water and blot before cooking. It is delicious in both a herbed Mediterranean tomato sauce and more intense curry sauces.
