Low in carbohydrates, it makes a great replacement for rice and can be used to make gluten-free pizza crusts. For vegans and vegetarians if can be sliced and roasted as a delicious cauliflower steak. Just be aware that it is a delicate vegetable and do not overcook, as this will result in a bitter taste and destroy its nutrient value.
