Highlights: Organic shallots (Allium cepa var. ascalonicum) 青葱 Qīng cōng, as can be guessed from the Latin and Chinese naming, are closely related to the humble onion. Used extensively in French cuisine however, shallots have a more refined image. They are more delicate in flavour than onions, adding a more rarified piquancy to both vinaigrettes and casseroles, a sweetness without sharpness.
Like garlic and onions, and to a wider extent of all vegetables belonging to the Allium family, shallots are a wonderful condiment with a wide range of nutraceutical properties. Shallots share the same antioxidant properties as garlic, and the organosulfur compounds they contain which give them that distinctive smell. Shallots are rich in minerals, vitamins and trace elements, shallots are a wonderful food for a well balanced healthy diet.
