Highlights: Leafy Chinese mustard greens (Brassica juncea) 雪里红 xuě lǐ hóng, also known as snow mustard greens because of their snow-hardy nature, are greens with a spicy nature. The very young leaves can be used to add a spicy flavour dimension in salads, while the larger, stronger flavoured leaves may be stir-fried. The large leaves may also be salted and preserved as a pickle.
This long leaved spring mustard is one of the vegetables symbolic of longevity and presented in Chinese New year dishes often on the second day of the lunar new year. Considered warming in nature in TCM, mustard warms the middle Jiao which contains the organic of digestion. It expands the lung and helps to dispels mucus, promotes circulation and relieves congestion, improves laryngitis.
Organic spring mustard like all members of the cabbage family are an excellent source of fibre, cancer-fighting phytonutrients and antioxidants. They contain fat-soluble vitamin K which plays a role in building healthy bones and decreases the risk of Alzheimer’s by limiting neuronal damage. About 100g of the fresh leaves covers 215% RDA of phylloquinone – vitamin K1. They are also rich in the carotenoids beta-carotene, lutein and zeaxanthin, which support healthy mucosa, skin and eye health.
The fresh leaves also offer the water soluble B-complex vitamins and vitamin C with 100 g fresh leaves providing 3% RDA of RDA folate (B9) which plays an essential role in DNA synthesis and cell division during pregnancy and growth periods and 100g providing 117% RDA vitamin C to protect the immune system from viral and free radical damage.
