Highlights: This delicate succulent adds a delicious crunchy texture to salads as the leaves are studded with tiny bubbles which the plant uses to store water. Originating probably in the maritime dune areas of Northern and S. Western Africa, the plant has developed this feature to cope with desert conditions.
Apart from adding to salads where is pairs well with a sesame dressing, the Japanese use it for tempura. It may also be used in a quick stir-fry where it retains its texture and pairs well with garlic, mushrooms, fermented black bean sauce, lemon, meat or seafood.
It also has interesting beneficial properties and acts as a demulcent, forming a soothing film over inflamed skin, internal protecting the mucous membrane and external relieving UV damage. The plant also contains isoflavones with anti-inflammatory properties and has been used to treat inflamed pulmonary and genito-urinary mucous membranes.
