Highlights: Sebago potatoes (Solanum tuberosum) 土豆 Tǔ dòu, are a late season variety of edible tubers of the nightshade family Solanaceae, first bred in Maine, USA to resist late blight, a crop devastating fungus. Since then they were introduced in the 1940’s to Australia and because of their versatility have become on of the most popular varieties.
The great thing about organic potatoes is that the skin, which has the highest fibre and antioxidant content can also be eaten. Grown in well balanced organic soil they offer the minerals potassium and manganese as well as the vitamin B and C complexes. They also contain resistant starch which is perfect as food for bacteria in the gut microbiome where it is turned into beneficial short-chain fatty acids. This can be increased by cooking then storing overnight in the fridge.
Sebago potato has a floury texture which makes excellent fried, roast and mashed potatoes. Please make sure to store in a dry, dark place.
