Highlights: Green peppers (Capsicum annuum) 青 椒 qīng jiāo are the first stage sweet peppers show before ripening through yellow to red. Less sweet than their brighter counterparts they are still packed with beneficial fibre, iron, vitamins C and B6 and are higher in phenolic antioxidants that red or yellow peppers. They are also rich in the carotenoid lutein which protects the photoreceptor cells in the retina from damage and helps prevent macular degeneration.
Featured in many dishes in their native S. America, they have found their way to the old world through the Spanish. Now China is one of the world’s largest producers. From classic Mexican stuffed peppers, through Spanish paella to Chinese stir-fries, the green capsicum features in them all.
