Highlights: Thought to have been domesticated 7,000 years ago in in China, 毛豆 Máo dòu ‘furry beans’ or organic edamame, as they are more commonly known, are harvested green before the soybean pods are fully ripened. This means they are sweeter and more flavoursome than the mature beans with more sucrose, glutamic acid, aspartic acid and alanine as these decrease as the beans ripen.

The beans should never be eaten raw and are usually boiled in a brine solution or steamed and sprinkled with salt and served as a popular snack to accompany beer in Japan. In fact the first written mention of edamame is in 1275 in Japan in the form of a ‘Thankyou’ note for a temple gift. 

The organic edamame beans are rich in lutein, beta-carotene, violaxanthin, and neoxanthin in addition to Vitamin C, K and beta-carotene with their respective antioxidant and anti-inflammatory properties. They are a protein-rich snack and are best eaten fresh or prepared within 3 days.
