Highlights: Thought to have originated in the Mediterranean, lettuce is recorded in Egyptian hieroglyphics in 2,500 BC. The Greek variety named for the island of Cos (Kos), grows a long head of dark green leaves with a lighter green, crunchy central rib. Known as khus خس      in Arabic, it frequently appears Meze platters in Middle Eastern cuisine and of course may be stir-fried like Mak Cai in Chinese cuisine.  It migrated with Columbus to America where it is known as Romaine lettuce and is commonly used in Caesar salads because of its mild flavour and crisp texture.

A member of the Daisy family (Asteraceae), Cos or Romaine lettuce (Lactuca sativa L. var. longifolia) 油麦菜 / 莴苣 Yóumài cài / wōjù is a good source of fat soluble chlorophyll, β-carotene, lutein and vitamin K1. It also offers vitamin B9 folate, which supports cell division and replication of genetic material, vitamin C and the minerals calcium, potassium, magnesium and phosphorus. As such it helps support growth and repair, vision and bone density.
