Highlight: Highland Choy Sum Flower is much sought after as when allowed to mature and produce the first flowers the shoot becomes sweeter and more succulent. A member of the Mustard Family (Brassica parachinensis) it is rich in ?-Carotene which is good for eye health, bioavailable calcium to support bone health and dietary fibre. Brassica vegetables also contain sulfur-rich compounds known as glucosinolates. It is suggested that these compounds may have a protective measure against cancer, as with sulforaphane which is found in broccoli. They have a characteristc bitter taste and pungent smell. The shoots of the Choy Sum Flower are delicious blanched, stir-fried or steamed and are often found as an accompaniment to Cantonese savoury dishes.
