Bitter Gourd “Jjajangmyeon” by Sheryl Lee (Eggshellninja)

Bitter gourd is a super healthy vegetable that should be incorporated in our diet. It has multiple health benefits including blood sugar control, helps in weight loss, ensures skin and eyes health and boosts the immune system. This recipe not only gives Jjajangmyeon a healthier twist, it also makes bitter gourd more palatable by reducing its bitterness. As the use of condiments like black bean sauce, salt, soy sauce can load this recipe with too much sodium, take this Jjajangmyeon in moderation. Adding more potassium-rich foods like fresh vegetables and mushrooms could make this recipe more balanced as potassium  helps counteract the blood pressure increasing effects of sodium.

Ingredients:

  • 3 wholemeal ramen + 750ml water
  • 250g   organic bittergourd + 1 tsp bamboo salt
  • 2 tbsp unrefined sesame oil
  • 1 clove organic garlic, minced
  • 1 yellow organic onion, diced
  • 140g  Organic Erinji Mushroom, diced
  • 1 tsp sake (optional)
  • 3 tbsp organic soy sauce
  • 1 tbsp Simply Natural Organic Black Bean Soy Sauce 370ml
  • 1 tsp salt
  • A dash of freshly ground white pepper
  • 1/4 cup crushed cashew nuts
  • 2 sprigs chinese parsley (chopped)
  • 1 tsp dark soy sauce (optional)
  • 1.5 cups of water
  • 1 tbsp arrowroot + 3 tbsp water (mixed)

Method:

  1. Bring a pot of water (750ml) to boil
  2. Halvethe bitter gourd lengthwise and remove seeds/core with a spoon. Thinly slice the gourd and marinate with 1 tsp of salt to draw the bitterness out. Set aside
  3. Clean and chop the rest of the vegetables
  4. Cook ramen in boiled water until al dente. Drain, rinse with cold water, and set aside
  5. Squeeze juice out of salted bitter gourd. Rinse off the salt and drain. Set aside
  6. Heat pot on medium heat. Add sesame oil, garlic and onion. Stir fry until fragrant. Add in diced mushrooms, sake, soy sauce, black bean sauce, salt, pepper, and dark soy sauce. Stir fry for 1 min
  7. Add bitter gourd. Stir fry for 1 min. Add 1.5 cups of water. Turn heat to low. Cover and let simmer for 5 mins
  8. In a bowl , mix arrowroot starch with 3 tbsp water
  9. Uncover pot and stir in starch mixture
  10. Add cooked ramen into the pot, mix well, and turn off the heat
  11. Serve with crushed roasted cashews and chopped parsley
