She began to experiment with plain oats, using them to create special recipes for cookies and overnight oats and was delighted at the results. She fell in love with this nutritious high-fibre food! In her eyes, oats are no longer plain, tasteless or boring!

Clementine Chocolate Oats 🍊🍫

Ingredients:

  • 1 cup milk
  • 1/3 cup Simply Natural Organic Rolled Oats 
  • 1 Zenxin Organic Clementine – juice and zest
  • 2 tbsp cocoa powder 
  • 1 tbsp Simply Natural Organic Pea Protein Powder 
  • 2 tsp Simply Natural Corn Malt Sweetener
  • 1 tsp Simply Natural Chia seeds 
  • half dipped Zenxin Organic Clementine wedges in chocolate
  • A few slices of Zenxin Organic kiwi

Method: 

  1. Make Chocolate Dipped Clementines: Melt some chocolate over a bain marie. Be careful to not overheat the chocolate. Remove the bowl from the water before all the chocolate has melted. Stir until all the chocolate has melted and is smooth. Peel and separate the clementine into wedges. Dip each wedge into the chocolate halfway. Then refrigerate until you’re ready to top your oats. 
  2. In a small bowl place your chia seeds in a little bit of milk to soak.
  3. In a pot, stir the milk at low heat. Add cocoa powder, protein powder, clementine zest and stir until well combined. 
  4. Gently bring the milk mixture to a boil, add the oats and corn malt sweetener.
  5. Cook for 15 min, stir until the oats are creamy. 
  6. Add the soaked chia seeds and clementine juice. Mix well
  7. Transfer oatmeal to a bowl and top with the Chocolate Dipped Clementines and some kiwi. Ready to serve.

Chocoberrry Oat Breakfast Cookies

Ingredients:

  • 1 cup Simply Natural Organic Rolled Oats
  • 2 tbsp cocoa powder
  • 3 tbsp Simply Natural Organic coconut nectar sugar 
  • 2 1/2 tbsp Simply Natural Organic Pea Protein Powder (optional)
  • 1/2 tsp baking powder
  • 1/8 tsp french sea salt 
  • 1/4 tsp vanilla extract
  • 1/4 cup oat milk (or any milk should work)
  • 2 tbsp Simply Natural Virgin Organic Coconut Oil
  • 2 tbsp Simply Natural Organic Acacia Honey 
  • 1/3 cup raspberries (Fresh or frozen)
  • 1/4 cup chocolate chips 

Method

  1. Preheat the oven to 180°C
  2. Remove the raspberries from the freezer to defrost.
  3. Take 3/4 cup of the oats and blend until it becomes a flour. In a small bowl, sift together all the dry ingredients. 
  4. In a pot on low heat, place in all the wet ingredients and whisk for 2 min.
  5. Add the dry ingredients and leftover 1/4 cup of oats from the beginning to the wet ingredients. 
  6. Fold in the raspberries and chocolate chips until evenly distributed.
  7. Scoop about 1 tablespoonfuls of batter onto a lined baking sheet
  8. Keep 1-2 inches apart, as the cookies expand a little
  9. Bake the cookies in the oven for 13-15 minutes. 
  10. Remove from the oven and let cool for a few minutes
  11. Enjoy with a glass of milk!

Tips: You can use oat flour instead of blending the oat into flour.

Cinnamon Apple Pancakes

  • Serving: ~ 5 medium pancakes

Ingredients:

  • 1/3 cup Simply Natural Organic Rolled Oats 
  • 2 Zenxin Organic Granny Smith Apples, cut into small chunks  
  • 1/2 tsp Simply Natural Organic Ceylon Cinnamon (Fine Cut)
  • 4 tsp water
  • 2 tsp Simply Natural Corn Malt Sweetener
  • 1/2 tsp Simply Natural Organic coconut nectar sugar
  • 1 egg
  • 1/4 tsp baking powder 
  • 1 Zenxin Organic Passion Fruit
  • 1/2 tsp powdered sugar
  • Splash of almond milk (any milk works) 

Method:

  1. Cook the apples in a pan on low heat with the coconut sugar, corn malt sweetener, water, and cinnamon. 
  2. Mix apple chunks until fully coated and then stir until the apples have gone a light golden brown. 
  3. Once the apples have finished cooking, separated into 2 portions. 
  4. Take one portion of apple and blend it together with egg, baking powder, oats, and a splash of milk until smooth. Set aside.
  5. Use a small sieve to separate the juice of the passion fruit into a small pan. Add powdered sugar and stir over low heat with a wooden spoon until thicken. Remove the passion fruit sauce from fire and set aside. 
  6. Grease your pan with coconut oil, and pour your pancake batter into the pan; when small bubbles form, flip and cook for another 15 seconds or until the bottom has become golden brown. 
  7. Stack your pancakes onto a plate and top it with remaining apples.
  8. Drizzle the passion fruit sauce on top. If necessary, add a splash of water to thin out the sauce 
  9. Add some warmed up maple syrup and enjoy! 

Healthy Oat Protein Bars

  • Serving: 14 bars

Ingredients:

  • 1/4 cup chocolate chips
  • 1/4 cup Simply Natural Organic Pea Protein Powder
  • 1/4 cup Simply Natural Organic Corn Malt Sweetener 
  • 1/4 Simply Natural Virgin Organic Coconut Oil
  • 1/4 cup Simply Natural Organic Red Seedless Jumbo Raisins (chopped)
  • 2 cups Simply Natural Organic Rolled Oats
  • 1/2 cup Simply Natural Dehydrated Mixed Nuts (chopped)
  • 1 tsp Simply Natural Organic Ceylon Cinnamon (Fine Cut)
  • 1/4 cup Almond butter
  • 1/4 cup cashew butter
  • 1 ripe banana

Method:

  1. Place rolled oats, protein powder, mixed nuts, raisins, and chocolate chips into a medium bowl and mix well. 
  2. In a normal saucepan on medium-low heat, melt together the corn malt sweetener, coconut oil, nut butters, and cinnamon. 
  3. Mash the ripe banana and whisk it in with the rest of the wet ingredients. 
  4. Pour the wet mixture into the dry and mix very well, until combined. 
  5. Place the entire mixture into an 11×7 in or 8×8 in lined pan and press firmly into place. 
  6. Refrigerate for 1 hour 
  7. Cut into small bars and store in refrigerator
  8. Drizzle with chocolate after cutting into bars 

Note- You can honestly put whatever you prefer into these bars, whether it’s more chocolate chips or nuts. If you are allergic to nuts you can swap the nut butters out for a seed butter! 

Salmon Avocado Oats

  • Serving: 1 bowl of oats

Ingredients:

  • 1 smoked salmon
  • 1/2 Zenxin Organic Avocado
  • 1 poached egg
  • 1 Zenxin Organic Cherry Tomato
  • pinch of salt
  • 1/4 cup shredded Zenxin Organic Zucchini 1/3 cup Simply Natural Organic Rolled Oats
  • 1/2 cup unsweetened almond milk
  • 1 tsp Zenxin Organic Lemon juice (enough to drizzle around)
  • Simply Natural Organic Black Pepper (optional)

Method:

  1. Make poached egg: Add a little over an inch of water into a small pot and bring it to a boil. Add a splash of vinegar. Use a spoon to swirl the water so that it looks like a whirl pool. Place your cracked open egg slowly into the center of the swirl and let it cook for 2-3mins. 
  2. Place the zucchini in a pot and cook for 1 min. 
  3. Add milk to the pot and bring it to a boil. 
  4. Add the oats and cook for 15 min and the oats have a creamy texture. 
  5. Make sure to stir the oats every so often. 
  6. While the oats are cooking cut up the tomato into small chunks, the half avocado into slices, and smoked salmon. 
  7. Once the oats are cooked place them in a bowl and let them cool a little for 2-3 mins
  8. Add all the toppings: avocado, tomato, poached egg, smoked salmon, lemon juice, and black pepper (optional).
