Fennel, Orange and Cherry Salad

Ingredients:

  • 340g  fennel bulbs, in pieces (5 cm)
  • 130g ZENXIN Organic Red Apple, halved (approx. 1 apple)
  • 2 tbsp Simply Natural Organic Dried Tart Cherries
  • 2 – 4 tbsp Simply Natural Premium Pistachios Nuts, salted, shelled or 2 – 4 tbsp Simply Natural Dehydrated Cashews Nuts, salted
  • 2 tsp ZENXIN Organic Lemon juice, to taste
  • orange segments, from 1 orange
  • 1 tbsp Simply Natural Organic Extra Virgin Olive Oil
  • Simply Natural French Sea Salt, to taste
  • Simply Natural Ground Black Pepper, to taste
  • 2 tbsp ZENXIN Organic Parsley Leaves, chopped

Methods

  1. Place fennel and apple into mixing bowl and chop 2 sec/speed 5. Transfer to a serving dish.
  2. Add cherries, pistachios, lemon juice, orange segments, oil, salt and pepper. Mix to combine with spatula, garnish with parsley and serve.
