Highlights: Organic Spelt flakes (Triticum spelta) 斯佩尔特小麦sī pèi ěr tè xiǎo mài are a great alternative for wheat flakes. Spelt is an ancient grain and has retained the outer hull which protects it from pests making it easier to grow organically, unlike more modern hybridised wheat which has developed enzyme inhibitors to ward off pests. Enzymes are necessary for proper digestion to take place, so the lack of enzyme inhibitors in spelt as well as a water-soluble gluten makes spelt much more easily broken down and digested.
Spelt also has a broader spectrum of nutrients compared to modern hybridised wheat. It is an excellent grain source of B vitamins (B1 (thiamin), B2 (riboflavin), B3 (niacin), B6 (pyridoxine) and B9 (folate). It also has a higher amount of minerals such as manganese, magnesium, phosphorous, zinc and iron than wheat flakes.
Spelt flakes have a slightly nutty, sweetish flavour and are very delicious with honey, yoghurt or fresh fruit. Extremely versatile they may be added to soups, croquettes, muesli, bread, muffins and biscuits. Known for health properties as far back as the 13th century Hildegard of Bingen noted that “Der Dinkel ist der beste getreide….” (Spelt is the very best grain…..) In her eyes it improved vitality so much that she recommended spelt porridge with a little butter nourish those who were so sick they could not eat.
