Highlights: Red kidney beans belong to the Fabaceae or bean family and are a variant of the common bean Phaseolus vulgaris. Known as Rajma in India, where they have become immensely popular, they are thought to have originated in Peru. Part of the Central American 3-sisters diet, the combination of beans with rice offers complete protein.
As with all beans, Red Kidney Beans are an excellent source of fibre which both helps to reduce cholesterol and stabilise blood sugar making them a ‘go to’ lifestyle change for anyone suffering from diabetes, insulin resistance or hypoglycaemia.
Warning: These beans should not be eaten raw or undercooked as they contain a particularly high amount of a toxic protein called phytohaemagglutinin. As with all beans they are best soaked overnight. Red Kidney beans should then be drained and boiled at 100°C for at least 20 minutes, before simmering until soft. This destroys the phytohaemagglutinin and also reduces other anti-nutrients such as phytic acid, trypsin inhibitors and alpha-amylase inhibitors which inhibit nutrient absorption in the gut.
