Highlight: The globe artichoke (Cynara cardunculus) is the bud of a member of the thistle family (Asteraceae). The tender fleshy part of the leaves are edible as is the base of the flower after the ‘choke’ or stamens are removed. The core of the stem is equally delicious and best served with a classic Aioli (garlic, egg yolks, olive oil and lemon juice). Native to the Mediterranean, globe artichokes have been cultivated on Sicily since Classical Greek times. Bursting with antioxidants with an ORAC value of 9,416μ mol TE per 1 globe, it has been used for centuries to de-tox the liver. It supports bile production and is an excellent source of fibre and inulin improving the growth of good bacteria in the gut.
